We baked, sort of.  We did make cookies together but there was no baking.  It’s hot and there’s no need to use the oven of you don’t have to. I’ve been wanting to make some treats with E for awhile now but I’ve been terrified of the mess.  I got over it and we had a blast.  There is no time for picture taking when you have a helper scooping and pouring the oats and the almond milk and digging his fingers into the half stick of butter.  So you get a few before/after shots that are still cute and bake-ish.

  • 1 cup sugar*
  • 3 tbl cocoa powder
  • 1/4 cup butter*
  • 1/2 cup almond milk
  • a pinch of salt
  • 13 cups quick cooking oats
  • 1/2 cup peanut butter
  • 1 tsp vanilla extract
What to do:
1.  Have your adorable child help measure the ingredients
2.  Bring sugar, cocoa, margarine, milk and salt to a boil for 1 minute
3.  Stir in oats, peanut butter and vanilla; mix well
4.  Drop by spoonfuls onto waxed paper and let cool
I think this makes about 20 small cookies.  Give some to your neighbors or you will eat them all like I did.
*I tend to use about half the sugar and butter in most recipes.  You won’t even know it’s missing.

Here’s what Emmet did while I stirred, dropped the cookies onto waxed paper and asked him repeatedly to be careful.  As if he has any idea how to do that. And yes, we no-baked nakey.  Well, he did.  I had clothes on.

And the final product.  Which he refused to try on a couple of occasions.  I gladly ate his portion.

    This is one of my all time favorite things to make! I remember my mom making these when I was a kid, and of course for the longest time I thought it was really my grandmother’s recipe. Then I found out that it’s everyone’s grandmother’s recipe. Looks like he had a blast “helping”!
